
This one just kind of came together on the spot, based on the No Worry Curry base I posted some months ago. Having ridden hard yesterday and felt a bit rough today, I wanted something nutrient- and protein-rich but since I had no fish, meat or poultry thawed wanted something I could make right out of the pantry. The Night Vision moniker refers to the heavy dose of carrots and sweet potatoes; I used those in place of the normal rice to provide some starchy element to the meal.
Ingredients:
First, aromatics: one red onion, diced, 4 cloves of garlic sliced thin, one thumb-sized piece of ginger peeled and grated, 1 tbsp cumin seeds
Second, the rest: 1 cup each red quinoa and red lentils, 1 sweet potato peeled and cubed, 3 carrots peeled and cut into 1" pieces, 2 cups spinach, 1 tbsp each turmeric, ground cumin, ground coriander and 1/2 tsp or so fresh ground pepper.
1. Put all of "the rest" into a large pot with ~5 cups of water. Start it on the way to boiling.
2. Heat a skillet to medium heat with 2 tbsp of oil. Saute the aromatics for 8-10 minutes, turn off the heat.
3. When "the rest" comes to a boil, turn it down to low and let it simmer for 25-30 minutes. You can add another 1/2-3/4 cup water if you need to. When the quinoa and lentils are tender, take them off the heat and mix in the aromatics. Add salt if you need to.
4. Put in mouth and repeat.
